Let me start by saying that I love each person who is actually taking the time to read this note. I hope you enjoy... and good luck!
Here's a little background info about me...I love to eat but I don't always like to cook. I don't eat everyone's dishes because I'm spoiled from my mom's cooking and the dishes and desserts Ms. Vonnie (Tamara's mom) and sister Marie -Denise Jean makes! I will explain that in another post sometime iin the future.
So today I will discuss my process for creating a Grilled Chicken Dish.
Things I used:
Chicken breast
limes
salt
pepper
seasoning marinade
1 bag of dry black beans (Goya)I will only use 1/2 of it
garlic
onions
bell peppers
vegetable oil
white rice
corn
Step one: Preparation
I don't like being in the kitchen for hours at a time...so what I did was cleaned all the fat off the breast of chicken, rubbed it with salt and limes and then I rinsed it with warm water. Don't use boiled water because this will dry out your chicken. Then I seasoned ith with a special blend an added a citrus marinade, and kept it refrigerated over night. I also soaked my dry beans overnight in water so that it would not take long to boil.
Step 2: making your sauce pois ( black bean sauce)
Depending on your serving size add 1-2 cups of water to the soaked beans. Add 1 tablespoon of vegetable oil, and 1-2 cloves of minced garlic to your mixture. Bring your beans to a boil on med- hi heat until the water is almost absorbed, then add 2 more cups of water for a final boil. During this time you can now add salt, your favorite seasoning, 1 maggie (chicken flavored bouillon cube), or a combination of all three of these in order to get your favored taste.
Step 3: Grilling your chicken
Please note....I love BBQ chicken but I hate the stench it leaves in your hair and clothes.....
If you can recruit someone who knows how to work a grill and doesn't mind the strong aroma of charcoal, go for it. Otherwise, make sure you grill in a well ventilated area.
So....by now the chicken has been soaking in the fridge in a tasty citrus marinade overnight and is just dying to be grilled...then later eaten.
Just place it on the grill and brown on both side until its the way you like it.
I like my chicken dark on the outside and moist and tender as you bite into it.
I aslo like to add some seasoned water mix to the chicken while its on the grill.
As you can see from the above pictures, you can grill just about some of everything. My moms loves grilled corn, although I must say it taste much better in Haiti. I was too afraid to really grill that corn on the cob for fear of burning down the house. Anyway, like I said I'm not a pro...this is just one way of doing it...I guess.
Step 4: Making white rice
Not difficult at all....1 cup of rice to 2 cups of water. Add salt or buter for taste, then let it simmer down some. Let me break it down. After you've added you rice to your water or vice versa, let the water boil down on med - hi heat. As the water slowly dries out turn the temperature down to low and let it SIMMER DOWN some.
Step 5: Tell someone you love them by actually using one of the tools God gave you....your hands....so you can serve them....
This is what it looks like plated up....I'll give myself a 5 for presentation. I have a hungry brother who tends to eat everything in the fridge, so I had too make sure this would last me for two days. LOL! The below picture is what I gave to my friend...
